Yesterday I made carnitas. I made a lot of carnitas, so it’ll be featured in a few more tacos going forward, I think. The key is to make a change now and then, and today it’s a new salsa.

It’s a simple salsa, basically a bunch of garlic, onion, some cilantro, a serrano chile, orange and lemon juice, and a splash of mezcal. I’m not exactly sure why it’s called a “mojito” salsa when it’s got more in common with a margarita, but it’s listed as such in this Salsas and Moles cookbook (which is my new favorite cookbook), so I’m not going to question it. And, this salsa is fantastic. FANTASTIC. The combination of garlic, lime, and cilantro is magical. It’s magnificent with the pork, and the citrus juice cuts pairs well against the queso. You might notice it’s a flour tortilla. Yes, it is. These were a quick fix, and I won’t apologize for it. I was just planning on having the two, but I needed to make another round of two of these, they were so good.
