We’ve all had taco pizza. Well, maybe most of us have. When I first started college, I had roommates from either coast who had never heard of the glory that is taco pizza. I’ve always heard it was a Happy Joe’s invention, but I thought it would have caught on everywhere else (fun aside – when I was a kid, my family bought a couple Dalmatian dogs from the founder of Happy Joe’s. It was like we were famous).

Anyway, I thought it’d be fun to make a play off of taco pizza by making a pizza taco.

I love Canadian bacon and mushroom pizza, and wanted to recreate it here. I shredded mozzarella, sauteed a handful of mushrooms, and warmed up a couple flour tortillas. The Yucatecan salsa I made a few days ago worked as the “pizza sauce.” I liked this. Very much. I’ll play around with this more in the future, different toppings, etc. Could have even done a quick trip under a broiler to melt the cheese. Like a real pizza! But, for now, these’ll do. These’ll do alllllllright.
